Traditional Shakshuka

A traditional dish from the Middle East and Northern African, Shakshuka (pronounced “shack - shoo - ka”) makes a wonderful family style meal. This dish with standard components such as onions, peppers, tomatoes simmered until bubbly then adding eggs to poach right in the pan. It can be served for breakfast, lunch or supper. Spiced with cumin, chilies and berbere (an Ethiopian spice blend), this slightly spicy dish is best served with a crusty flat bread. In addition to the traditional ingredients, you can add artichoke hearts, chick peas and feta cheese for more flavor and substance.

The Italian version of this dish is called “Eggs in Purgatory.” This twist on the traditional is often adds garlic, red pepper flakes and parsley or other Italian herb and is served with a crusty Italian bread.
