Perfect Salad for Autumn Weather

Autumn always reminds me of warm spices like cinnamon, cloves and nutmeg. What better way to enjoy the fall weather than with those spices incorporated into a dish using other traditional fall ingredients?

In this dish, butternut squash is slow roasted with thinly sliced onions, allowed to cool, then combined with Israeli couscous, garbanzo beans, rehydrated dry cranberries and goat cheese. A simple dressing of cinnamon, nutmeg, orange zest, some orange juice and a little oil takes this salad to new heights. This salad makes a hearty Autumn weeknight main course or filling weekend lunch!
