Kofta - it’s what’s for dinner!

One of my favorite things to do during the summer is grill various meats. Whether this be steak, burgers, pork or chicken meat always tastes better when grilled.

This week, my weekly clients got a taste of the Middle East with Grilled Persian Kofta. There are many ways to make them, but I use a blend of ground beef and lamb, parsley, allspice, cardamom, sumac, nutmeg and paprika for a pretty traditional taste. Served with warm pita and a traditional tahini yogurt sauce and accompanied with fresh vine ripe tomatoes and sliced onion, it makes a great weeknight meal.
